Lime & Jalapeno Guacamole

2 ripe Haas avocados
Juice of 1 lime, plus zest of 1/2 lime
3 tablespoons finely chopped red onion
1 teaspoon minced garlic
1 small jalapeno pepper, seeded and finely chopped
1/2 cup light or fat-free cottage cheese
2 tablespoons light or fat-free sour cream
1 tablespoon milk, skim, 1%, almond or soymilk
1/4 teaspoon kosher salt
2 tablespoons fresh cilantro, chopped
1. Open your avocados by cutting them in half; then remove the pit. Scoop out green insides with a spoon and place in a medium-sized bowl. Squeeze lime juice over avocado. Grate in zest from 1/2 of the lime. Mush avocado to desired consistency with a fork.
2. In a small blender, place cottage cheese, sour cream, and milk. Blend until pureed. Add cream mixture to the avocado bowl, and fold in onion, garlic, jalapeno, salt, and cilantro.
*Note: This guacamole is made lower fat and higher protein by the secret addition of cottage cheese. It’s smooth, creamy, delicious.
*Tip: Avocados are packed with monounsaturated fats. Good fats that your body desperately needs – in small amounts.
