Happy Mothers Day

To honor Moms, we asked our customers to share a favorite childhood meal with us. We chose the heartfelt memory of Lisa Yates from Louisiana and her grandmother’s Mock Almond Chicken.
Recipe: Mock Chicken Almond (owner & passed down to me & my sister- my grandmother Jean Burton)
- 2 lbs pork sausage (you may use hot)
- 2 med. Onions chopped
- 1 bunch celery chopped
- 1 bell pepper chopped
- 2 cups raw long-grain rice
- 1 box of essential chicken noodle soup (use all envelopes)
- 1 (3-oz) pkg blanched almonds
Brown sausage in very large skillet; drain most of fat off. Add chopped vegetables & cook lightly. Add rice & soup mix to 2 ¾ quarts boiling water,stir & cook till rice is tender. Add other ingredients & season with salt & pepper to taste. Bake 1 ½ hours at 325 deg. In a covered dish. Makes a very large amount.
