I could use some pointers on making gluten-free bread. So many of the commercial breads are like bricks labeled “bread”. There’s got to be a way to create softer bread-like bread.

I have been making gluten free bread and have found that any recipe is dry and crumbly. I add 1/4-1/2 cup of applesauce to the mix and extra 1 tsp xanthan gum in addition to the recipe. This makes the bread less crumbly and more moist. It also helps to wrap the bread tightly and refrigerate after cooling for only 30 min. This keeps the moisture in also and makes it easier to slice. Glutino makes a great box mix if you have a hard time finding rice or almond flours.
