It’s Soup Season!

Warm and fulfilling one-pot soups, such as chowders, chilis, and stews, are rich and satisfying in the fall and winter months, especially when chocked full of seasonal ingredients like sweet potatoes, butternut squash and barley. Yet busy schedules this time of year do not always allow for a fresh homemade meal. However, preparing in bulk can not only allow your family to eat healthy hearty meals but also saves you time and money, as cooking with fresh ingredients liven up a soup and can be easily done by choosing Fresh Cuts veggies and buying in bulk for convenience and price. When you are planning to prepare a soup, while you are at it, why not go on and double (or triple) the recipe and freeze the rest! Soups are a great way to make extra, as they can easily be adjusted to make more and usually get better with time. Solve the dinner solution on especially hectic nights with these trim and terrific tips:

  • Don’t be overwhelmed by a soup’s long list of fresh ingredients. Simplify with Fresh Cuts – a favorite short cut minimizing cutting and chopping.
  • When doubling recipes, soups are unique in that cooking time and temperature are usually unchanged, and minimally if so.
  • Due to the size of food to be cooked, the time the recipe calls for should be similar.
  • Soup recipes can often be doubled exactly as listed, just be sure to choose a pot large enough to prevent boil-over.
  • Broth based soups are healthier, while soups with sour cream or yogurt tend to not freeze as well.
  • Freeze in zip-top bags to stack easily in freezer.
  • Freeze soup in your family’s meal size containers and consider also freezing some in individual sizes for an easy single meal. 
  • Remember to leave room in the top of the container, as it will expand once frozen.
  • When meal planning, any meatless soup can always add rotisserie chicken for a heartier version.
