Mix Up Your Breakfast in 2015

December can be overwhelming – it’s such a busy time of year. And not only is it a busy time, it’s an indulgent time, too, with holiday parties and cocktail hours and family dinners waiting around every corner. If you’re not careful, the combination of the two can be a disaster even for those of us with the best intentions for healthy living. At this time of year, making sure to choose a healthy breakfast is especially important – it sets the tone for the rest of the day, and it’s easier to control your choices first thing in the morning in your own house than when faced with a tempting holiday party spread.

Granola is an easy choice for a healthy breakfast on-the-go, but the combination of granola and yogurt can get boring after a while. While trying to think of ways to mix it up on the granola front, I began to wonder why yogurt is always the focus of breakfast parfaits, when what most of us want more of is the fruit. So for this parfait, I swapped in layers of creamy mango puree for the yogurt, and the result was wonderful – sweet, refreshing, and energizing. You can even make this the night before, just skip the granola until right before you’re ready to enjoy it. Topped with just a small dollop of yogurt and a drizzle of honey, having one of these in the fridge will make you look forward to breakfast all night.

This recipe is pretty adaptable – try swapping in your favorite seasonal fruit for the berries, or using a combination of peaches and mango in the puree for a different flavor. Those who are dairy free could replace the small amount of yogurt in the mango puree with a tablespoon of coconut milk for a tropical twist. You could even get away with serving this as a light dessert – simply replace the yogurt topping with a dollop of whipped cream, and you’re good to go.
