One Pot Beef Stroganoff | Cooking Challenge with Darbi

As I try more and more recipes, I have found one common denominator in making cooking something I can tolerate….one pot meals! In my lazy opinion, there is absolutely nothing better than a meal I can do in just one pot. A meal that tastes amazing and is healthy, prepared in just one pot. A meal my children will eat, coming from just one pot. A meal that requires as little work as possible, as well as minimal cleanup, because it was made…in just one pot! I know it seems silly, but the easier the meal the more apt I am to make it. By the time I get home at night I am exhausted! Then you throw an 8 and 10 year old in the mix with homework, activities, chores and night time routines…well, let’s just put it this way…I don’t wanna cook! However, these one pot, tasty meals are beginning to change my way of thinking!
Beef stroganoff is one of my favorite boxed meals to make. It’s fast, it’s easy and I truly like the taste. So when I was asked to try this easy, one pot beef stroganoff I jumped all over it. I have tried other homemade beef stroganoffs but they never seemed to make the grade. My kids have only ever liked it from the box and, if I’m being honest here, I never liked the fact that I had to use multiple pots to make the homemade kind…which means multiple pots to clean up. One pot meals are quickly becoming my favorite thing!
With this meal, I decided to try something absolutely insane…cooking something new on a weeknight! I know this doesn’t sound like much, but I wanted to see if I could do it with some pretty hefty time restraints, i.e., my kids. On a really good night, I am allowed roughly 30 minutes from the time I get home from work to the time little voices begin exclaiming that they could be dying from hunger (my children are only slightly dramatic). I have to be honest, it was a success! My kids were completely satisfied with the incredible smell coming from this one pot meal. Somehow this was enough to satisfy their natural urge to whimper.
I began by melting 2 Tablespoons of butter in a large skillet. I then sautéed the 2 cloves of garlic for just a few minutes.
Then comes the browning of the beef. I absolutely love mushrooms so I added just a few more than the 8 ounces the recipe called for.
Once the mushrooms were amazingly perfect, I added the flour to the mix.
Next comes the beef broth. As soon as the broth began to boil I added the egg noodles. This was about the time my kids were really getting interested in what was going on with this one pot wonder.
Cover the pot and boil about 10 minutes stirring often so the noodles don’t stick to the bottom. Once the noodles are cooked, remove the pot from the heat, add the sour cream, mix completely and SERVE!
My very favorite part of this recipe was how incredibly creamy it was! I don’t think I have ever had stroganoff that delicious! My kids differed in their opinions. My 10 year old daughter liked it, but didn’t love it. My 8 year old son loved it. I thought it was awesome! Hey…in my home when I hit a 2/3 success rate, I win!
