Every once in a while, along comes a recipe that is so versatile, you’re left wondering, “Where have you been all my life?” 

During the summer months with all of the get togethers and BBQ’s, you could bring your go-to recipe, but why not shake it up a little?  Make this one recipe and you’ll be able to use it in three, delicious ways…

To make this delicious summer staple, first, lay out the tomatoes in a single layer.

The best part about this is that the tomatoes will create a lot of their own flavor, so all you really need is olive oil, salt and pepper – they will roast to perfection!

Pop them in the oven and when they’re ready, put them in a blender or food processor.

Once these bad boys are ready, you’ll have enough to make one of the following delicious summer sides that anyone will love!  Try any of these tasty recipes…

    I would follow your instructions, except that I would add garlic and some red pepper flakes and some time other herbs/spices. IF I think the tomatoes need it, I will sprinkle a little sugar across them to ensure that their sweetness is brought out and that they carmelize. I then roast the tomatoes at 425 degrees, checking them and tuning them at 20 minutes and then at 10 minute intervals. I then let the tomatoes rest. And if needed, I pull the tomato skin off will the tomatoes are resting. These tomatoes are so sweet and so delicious@
