Bone-in Herb Crusted Leg of Pork

Ingredients:

  • 3 ½ -4 lb. bone-in leg of pork (fresh ham)
  • 1 tbsp. olive or vegetable oil
  • 1 tbsp. paprika
  • 1 tbsp. dried sage, crushed
  • 2 tsp. dried rosemary, crushed
  • 2 tsp. minced garlic
  • 1 tsp. cracked black pepper
  • ½ tsp. kosher salt or ¼ tsp. regular salt

Directions:

    1. Heat oven to 350 degrees. Brush surface of pork with oil. In a small bowl, combine paprika, sage, rosemary, garlic, pepper and salt. Rub herb mixture over surface of pork. Place on a rack in a shallow roasting pan.
    2. Roast for 1 to 1 ½ hours (about 18-20 minutes per pound) or until internal temperature on a thermometer reads 150 degrees.
    3. Remove roast from oven; let rest until temperature reaches 160 degrees, about 10 minutes before slicing.
