Essential Everyday™ – Simple Strawberry Cheesecake

Ingredients simple-strawberry-cheesecake

  • 1 cup finely ground Essential Everyday™ Low Fat Honey Graham Crackers
  • 3/4 cup granulated sugar, divided
  • 1/4 cup butter, melted
  • 2 (8 ounce) packages Neufchatel cheese, softened
  • 1 (8 ounce) container Essential Everyday Frozen Lite Whipped Topping, thawed
  • 1/4 cup strawberry preserves
  • 1 (16 ounce) container fresh strawberries, sliced


  • In medium mixing bowl, combine finely ground crackers, 1/4 cup sugar and melted butter; mix until well combined. Press into a 9-inch pie plate. Bake in a preheated 375°F oven 6-8 minutes. Cool.
  • Meanwhile, in large mixing bowl, combine Neufchatel and remaining 1/2 cup sugar. Using an electric mixer, beat on medium speed until smooth. Add whipped topping and continue mixing until light and fluffy.
  • Add preserves; mix on low until just swirled into mixture. Transfer to cool pie crust. Refrigerated until set (2-3 hours). Top with sliced strawberries just before serving. Serve with whipped cream, if desired.

    Neufchatel cheese – does albertson’s carry this product?

      Sorry for the delay, Regina. Our inventory varies by store so you might want to call ahead to see if they have Neufchatel cheese in stock. It would be in the cream cheese section, if it is available. ~Marie

    Neufachatel cheese is the same thing as Philadelphia cream cheese or any brand of cream cheese, for that matter. To ease your mind, iIt says the same thing on the box. Hope that helps.

      Unfortunately, we don’t have a simple “Print” button for this recipe, Patricia. However, you should be able to print the page by going up to “File” on your web browser and hitting “Print”, or typing “CTRL” + “P” – Another option would be to copy and paste the recipe in a word processing program (such as Word) and then printing it that way.     Left click on file in upper left, right click on PRINT PREVIEW, select page number you want to print.
    The rest is easy. Point to printer icon in upper left,
    put in page # & hit print.
