Baked French Toast with Orange Apricot Sauce

DIRECTIONS
In a medium-sized bowl, mix together the cinnamon sugar, eggs, milk, salt, nutmeg, and vanilla and blend well. Place the bread slices in an 8 x 12 x 2-inch glass baking dish and pour half of the egg mixture over the slices. Let stand for 10 minutes.
Carefully turn the slices over and pour over the remaining egg mixture. Cover with plastic wrap and chill overnight.
Preheat oven to 300° F. Spray a jelly-roll pan with cooking spray. Carefully place the chilled bread on the pan (keep pieces from touching, if possible) and bake for 1 hour.
Place one slice of baked toast on each serving plate and dust with the confectioners' sugar. Top with the sliced fruit and serve with the warm sauce.
