Baked French Toast with Orange Apricot Sauce

DIRECTIONS

  • In a medium-sized bowl, mix together the cinnamon sugar, eggs, milk, salt, nutmeg, and vanilla and blend well. Place the bread slices in an 8 x 12 x 2-inch glass baking dish and pour half of the egg mixture over the slices. Let stand for 10 minutes.
  • Carefully turn the slices over and pour over the remaining egg mixture. Cover with plastic wrap and chill overnight.
  • Preheat oven to 300° F. Spray a jelly-roll pan with cooking spray. Carefully place the chilled bread on the pan (keep pieces from touching, if possible) and bake for 1 hour.
  • Place one slice of baked toast on each serving plate and dust with the confectioners' sugar. Top with the sliced fruit and serve with the warm sauce.
