DIRECTIONS

  • In a mortar, grind the anchovies with 1 tbsp oil from the can until smooth. Add the garlic, parsley, capers and crumbs and continue grinding until the paste is well blended or use a food processor and purée.
  • Add the rest of the oil, vinegar, salt and pepper. Blend well and pour the mixture over the onions. Chill. Serve with chilled fish or meats as an hors d'oeuvre.
