Baked Stuffed Potatoes Red Lion

DIRECTIONS
Preheat the oven to 350°.
Wash the potatoes well. Rub the skins with the oil, and prick them twice with a fork. Bake at 350° for 1 hour.
Cut the tops off the potatoes while they still very hot. Scoop out the potato pulp (be careful not to pierce the skin) and combine it with the hot milk, 5 tablespoons of the butter, the sour cream, salt and pepper, chives, and mustard. Whip until smooth.
Place the whipped potatoes in a pastry bag fitted with a star tip and pipe the filling back into potato shells. Sprinkle with the Parmesan cheese and bacon bits and dust with paprika. Melt the remaining 5 tablespoons butter and drizzle it over the potatoes.
Bake at 350° for 10 minutes, until the tops are golden crisp.
