Tofu Reuben

  • Cut the tofu into small cutlets and lay the tofu flat in a large, shallow bowl.
  • To make the marinade: In a small saucepan, mix together all of the marinade ingredients and bring to a boil. Reserve 6 tablespoons of the marinade. Pour the remaining marinade over the tofu and set aside, or cover and refrigerate overnight.
  • To make the sauce: In a small bowl, mix together all of the sauce ingredients and set aside.
  • Preheat oven to 400°F. To make the sandwiches: In a small skillet, heat 2 tablespoons of the reserved marinade and grill the zucchini on medium-high heat for 3 - 5 minutes. In a separate skillet, heat the remaining reserved marinade and grill the sauerkraut on medium-high heat for 2 - 4 minutes.
  • In an oiled 12 x 15-inch baking pan, place the bread slices and spread 1 tbsp of the reserved sauce on each slice. Layer the marinated tofu, zucchini, sauerkraut, and cheese on each slice. Bake for about 20 minutes or grill under the broiler for 5 minutes. Serve hot.
