DIRECTIONS
Preheat the oven to 300°F.
Place the ham under cold running water and scrub the rind well with a stiff brush.
Dry the ham and place it in a roasting pan with the skin and fat side up. Insert meat thermometer through fat side into the thickest part of the ham.
Bake the ham, uncovered, 18 to 20 minutes a pound, or until it registers 160°F on a meat thermometer. Hams weighing 15 pounds or more need only be baked about 15 minutes a pound.
When the ham is done, remove it from the oven and, using ordinary kitchen shears or a sharp knife, cut off the rind. Score the fat diagonally about 1/8 inch deep to make a diamond pattern. Stud the corners of the diamond pattern with cloves. Combine brown sugar with dry mustard and a little of the ham fat from the roasting pan. Spread this mixture over the top of the ham.
Increase the oven heat to 425°F and return the ham to the oven. Bake until the sugar forms a glaze, about 15 minutes.
