Brandied Peaches II

DIRECTIONS

Wash perfect peaches, ripe but not soft. Rub off the fuzz with a clean cloth. Do not peel. Prick each peach twice with a fork.

For each lb of peaches use 1 cup each water and sugar. Combine the water and sugar and heat slowly until the sugar is dissolved. Bring to a boil and boil 1 minute.

Add the peaches to the syrup and boil until the peaches are tender, 5 to 7 minutes.

Pack the peaches in hot sterile jars and fill three quarters full with the syrup. Finish filling with brandy. Seal and store in a cool place 1 month before using.

One pound of medium peaches fills a pint jar.
