Fresh Peach Ice Cream

  • In a heavy saucepan, combine the cream, milk, egg yolks, 1/2 cup of the sugar and the vanilla. Cook over low heat, stirring constantly with a wooden spoon all around the bottom. Bring the mixture almost, but not quite, to the boil. It should be smooth and custardlike; the correct temperature is 180°F.
  • Pour the custard into a cold mixing bowl, which will prevent further cooking. Let stand until room temperature.
  • Add the remaining 1/2 cup sugar to the peaches and stir to dissolve.
  • Stir the peaches into the custard and pour the mixture into the container of an ice cream freezer. Freeze according to manufacturer's instructions.
