DIRECTIONS
Crush the garlic cloves with a flat side of a chef's knife blade to loosen the skin. Remove the skin and drop the cloves through the feed tube onto the moving blade of a food processor or blender and process to mince them fine, about 20 seconds. Add the drained beets and about half the can of chicken broth to the workbowl. Process until the beets are puréed.
Pour the beet mixture into a 3-quart or larger serving bowl. Add the remaining chicken broth, cabbage with its juice, sour cream, lemon juice, dill, celery salt, and cardamom. Stir well and serve at once, or refrigerate until ready to serve.
