Thai Beef Salad With Red-Hot Dressing

  • Make the Red-Hot Dressing. It'll take you about 5 minutes.
  • Slice the beef into 1/2-inch-wide strips and place in a 1-quart or larger bowl. Pour 1/2 cup of the dressing over the beef and stir until the beef absorbs most of the dressing. Reserve the remaining dressing.
  • If the lettuce is not prewashed, rinse it, drain, and spin or pat dry. Place the lettuce in a 3-quart or larger serving bowl. Slice the cucumbers. Add them to the bowl. Chop the mint and cilantro (if using) and add to the bowl.
  • Add the marinated beef to the bowl. Pour the remaining dressing over, toss well to mix, and serve.
