Tuna With Red Beans And Aioli

DIRECTIONS
If the lettuce is not prewashed, rinse it, drain, and spin or pat dry. Place a lettuce leaf on each serving plate.
Peel the garlic and drop it through the feed tube of a food processor, with motor running. Pour the olive oil and tarragon, (if using) through the feed tube and process to combine with the garlic. Turn off the motor, remove the lid, and add the mayonnaise. Scrape down the sides. Process until blended, 45 seconds. Scrape the mixture into a 2-quart or larger serving bowl, stirring to make sure all of the oil and garlic is incorporated.
Pour the kidney beans into a colander, rinse under cold running water, and drain thoroughly. Add to the bowl with the garlic mayonnaise. Drain the water chestnuts, then coarse chop the slices. Add to the bowl. Drain the tuna and add it as well. Flake the tuna with a fork, then stir well to mix with the other ingredients. Season with black pepper. Spoon the salad onto the lettuce and serve.
