DIRECTIONS

  • Heat the oil in a 12-inch nonstick skillet over medium heat. Meanwhile, peel and coarsely chop the onion, adding it to the skillet as you chop. Cook for 2 minutes.
  • While the onion cooks, rinse and drain the beans and drain the chilies well in a colander. When the onion is softened, add the beans, chilies, and salsa. Stir well and cook until the mixture thickens, about 5 minutes.
  • While the bean mixture simmers, wrap the tortillas in microwave-safe plastic wrap and microwave on high until warmed through, 1 to 2 minutes.
  • Place one tortilla on each individual serving plate. Spoon some of bean mixture in the center of each tortilla and top with 1/4 cup cheese. Fold the tortillas, tucking in one end burrito style, and serve, accompanied by sour cream (if using).
