Artichoke And Potato Casserole

  • Preheat the oven to 400°F. Cook the artichoke hearts in boiling salted water for 5 minutes. Drain, and cut into thin slices.
  • Heat 1 tbsp of the butter with the olive oil in a large heavy skillet over medium heat. Sauté the onion slices until golden; reduce the heat.
  • Add the potatoes to the skillet and toss to coat them well. Toss in the artichoke hearts; remove from the heat.
  • Rub a large 2-inch-deep ovenproof baking dish with the bruised garlic. Spread the vegetable mixture over the bottom of the dish. Lay the olive slices over the mixture. Sprinkle with salt and pepper to taste. Dot the top with the remaining 2 tablespoons butter.
  • Bake 15 minutes. Remove from the oven, stir well, and continue to bake until the potatoes are tender, about 15 minutes longer. Sprinkle the top with cheese and bake until golden, an additional 5 to 10 minutes. Let stand a few minutes before serving.
