Grapenut Pudding

  • Preheat the oven to 350°. Butter an 8-in square ovenproof pan.
  • Place the milk in a saucepan, and bring it just to a boil.
  • Mix the grapenuts, sugar, and salt together in a bowl. Add them to the scalded milk and cook for 2 to 3 minutes, over medium heat. Remove from the heat and stir one-fourth of the hot milk into the beaten eggs and mix thoroughly. Pour the eggs back into the pan, and return the mixture to the heat, stirring continuously until thickened, about 10 minutes.
  • Pour the pudding into the prepared pan, and bake at 350° for 30 minutes. Stir, and serve warm.
