Winter Squash Medley

DIRECTIONS
Preheat oven to 350°F (175°C). Cut acorn squash in half. Scoop out all seeds. Scoop out meat from squash with a paring knife or melon ball scooper. Take out as much squash as possible but do not break bottom of cavity.
Peel and core apples and cut into slices.
Combine apple juice concentrate and cornstarch mixture.
Combine pineapple, cinnamon and raisins, if using; mix with squash and apples. Pour concentrate mixture over squash and apples; mix well.
With a tablespoon, fill squash cavity with mixture. Arrange squash in a baking dish.
Cover with foil and bake about 35 minutes, until tender but not mushy.
Sprinkle cereal nuggets over squash and broil 2 minutes.
