Winter Squash Medley

INGREDIENTS

  • Preheat oven to 350°F (175°C). Cut acorn squash in half. Scoop out all seeds. Scoop out meat from squash with a paring knife or melon ball scooper. Take out as much squash as possible but do not break bottom of cavity.
  • Peel and core apples and cut into slices.
  • Combine apple juice concentrate and cornstarch mixture.
  • Combine pineapple, cinnamon and raisins, if using; mix with squash and apples. Pour concentrate mixture over squash and apples; mix well.
  • With a tablespoon, fill squash cavity with mixture. Arrange squash in a baking dish.
  • Cover with foil and bake about 35 minutes, until tender but not mushy.
  • Sprinkle cereal nuggets over squash and broil 2 minutes.
