Macadamia Nut Crusted Halibut

DIRECTIONS

  • Process nuts in a food processor or blender until finely chopped. Add in bread crumbs, cheese and cayenne pepper; salt and pepper to taste. Process until combined; transfer to a shallow dish and set aside.
  • Place flour in second shallow dish and beaten egg in a third. Dust halibut fillets in the flour, dip in egg, and coat with macadamia breading. Place fillets on a baking sheet that has been generously sprayed with cooking spray. Spray top of fish with additional cooking spray.
  • Bake in a preheated 400°F oven until fish flakes easily with a fork (about 10 minutes per inch of thickness).
