Apricot-Amaretto Pie

Preheat the oven to 400°.

In a large mixing bowl, combine the 1/2 cup sugar, flour, lemon zest, and nutmeg; mix well. Add the apricots and Amaretto, and toss gently until the apricots are evenly coated.

Roll half the pastry out to fit a 9-inch pie plate. Line the plate and pour in the apricot filling. Roll the second crust and cover the pie; crimp the edges by pinching them together, and make a few slits in the top to allow steam to escape. Brush with the skim milk and sprinkle with the teaspoon of sugar.

Place the pie in the oven and bake for 10 minutes. Reduce the heat to 350° and bake for an additional 30 to 40 minutes, or until the filling is bubbling and the crust is golden.
