Chicken & Mushroom Penne

DIRECTIONS

  • Prepare pasta according to package directions; drain.
  • Meanwhile, in large skillet, heat oil over medium-high heat. Add mushrooms, onions and garlic; salt and pepper to taste. Sauté until softened and slightly browned (about 5 minutes).
  • Add sherry and simmer until reduced by half. Stir in chicken, half & half, cheese and thyme; bring to a boil. Reduce heat and simmer 5 minutes. Stir in pasta and continue simmering until sauce is thickened.
