Lightly spray or wipe a large baking dish with vegetable oil. Pour the syrup into the dish. Slice the French bread into eight 2-inch-thick slices and place them over the syrup.
In a separate bowl, combine the eggs, egg whites, milk, vanilla, and 1/4 teaspoon nutmeg, and beat until well mixed. Pour the egg mixture over the bread, pressing the bread down gently so it soaks up the batter. Cover and refrigerate overnight.
Preheat the oven to 350°. Remove the pan from the refrigerator and sprinkle the remaining 1/2 teaspoon nutmeg over the bread; bake for 40 to 45 minutes, or until golden brown. Serve with fresh fruit, if desired.
