Tuscan Pork Loin with Sage

DIRECTIONS
Flatten each slice of pork between two pieces of waxed paper by pressing with the heel of your hand.
Lay one sage leaf in the middle of each slice of pork. Cut the slices of prosciutto into quarters. Lay one piece over each slice of pork. Hold the prosciutto, sage, and pork together with a toothpick.
In a large heavy skillet, heat the olive oil and butter over medium heat. Add the slices, pork sides down, without letting them touch, and cook until lightly browned, about 4 minutes. Turn and cook 2 more minutes, or until the prosciutto is crisp. Remove to a serving platter and keep warm.
Drain any fat from the pan. Add the Marsala and cook over high heat, scraping up all the bits from the skillet, until the sauce is reduced to 1/2 cup, 4 to 5 minutes. Season with salt and pepper to taste. Pour the sauce over the pork and garnish with parsley.
