Basil Quesadillas

DIRECTIONS

  • Preheat the oven to 425°.
  • In a blender, purée the goat cheese, cottage cheese, and 1/2 cup of the mozzarella. In a small bowl, place the wine and the tomatoes, and marinate until soft.
  • Spread half the cheese mixture on two of the tortillas to within 1/2 inch of the edges.
  • Drain and chop the sun-dried tomatoes. Place one tortilla on a cookie sheet. Sprinkle half the tomatoes, garlic, basil, bacon, scallion, and jalapeño pepper over it. Place the second tortilla on top of the first. Sprinkle the remaining tomatoes, garlic, bacon, scallion, and jalapeño pepper over it.
  • Place the third tortilla on top and sprinkle the rest of the mozzarella on top of it. Bake for 8 to 10 minutes, or until the cheese begins to brown. Slice into wedges and serve warm.
