Spicy Black Bean Burritos

DIRECTIONS
Drain the black beans and put in a saucepan with water to cover. Bring to a boil, reduce heat to a simmer, and cook until the beans are soft. This may take an hour or longer; add more water to keep beans covered while cooking if necessary. As the beans begin to soften, let the water evaporate.
When beans are done, sauté the onion and garlic in lard until soft but not browned. Add the cooked beans and any liquid, and cook 30 minutes more over low heat. Add the chopped jalapeño and cilantro and season to taste.
Preheat the oven to 325°F.
Spread 1-1/2 tablespoons of the bean mixture on one half of each tortilla. Roll once, tuck both ends toward the center, and continue rolling. Arrange the burritos in an ovenproof dish and cover with foil.
Bake the burritos for 10 minutes, or until thoroughly warm. Serve immediately.
