Whole Roasted Chicken With Goat Cheese And Sage

DIRECTIONS
Preheat the oven to 400°F.
With your fingers, gently loosen the skin of the chicken's breast and legs.
Cut the goat cheese into slices 1/4 inch thick. Carefully place the rounds in a decorative pattern under the skin and press a sage leaf into each round.
Stuff the chicken with the fresh herbs and truss with butcher string. Place on a rack in a roasting pan and surround the chicken with the onions, shallots, and garlic. Roast, uncovered, until the chicken is done, approximately 1 hour; baste occasionally with melted butter. Serve hot.
