DIRECTIONS

  • Preheat the oven to 400°F.
  • In a large, heavy skillet or copper casserole, sauté the scallions, garlic, rosemary, and bay leaves in the olive oil for 3 to 4 minutes. Do not brown.
  • Add the peppers, eggplants, and mushrooms and sauté over high heat for 5 to 6 minutes. Add the okra and cook 2 minutes longer. Using a slotted spoon, remove the vegetables to a plate.
  • In the same skillet, sauté the chicken wings until browned (add a bit more olive oil if necessary), 5 to 6 minutes. Add the rice and sauté 2 to 3 minutes longer.
  • Return the vegetables to the skillet or casserole, add the hot stock and spices, season to taste, and cover. Simmer (without uncovering the skillet) for 5 minutes.
  • Place the skillet or casserole in the oven for 20 to 25 minutes. At this point the liquid should have been absorbed, and the rice should have puffed. Serve immediately with a sprinkling of fresh parsley.
