DIRECTIONS
Using a very sharp stainless-steel paring knife, slice off the stem and tip of one grapefruit. Working from top to bottom, cut away the peel in long strokes. With the peeled grapefruit in hand, and working over a bowl, slide the knife down the sides of each segment, cutting the flesh away from the white membrane. Twist the blade under the segment to lift it out, and place it in the bowl. Continue until all segments are removed. Squeeze the juice from the remaining membrane over the fruit to keep it moist.
Repeat with the remaining grapefruits and the oranges. Arrange the segments on a platter. Using a vegetable peeler, shave the coconut into long strips. Mound the coconut in the center of the platter.
