Wild Green Salad With Tart Lemon Dressing

DIRECTIONS
Tear the greens into pieces and put them in a large bowl. Keep refrigerated, covered, until ready to serve.
Combine the lemon juice and egg yolk in the bowl of a food processor, and blend well. With the machine running, add the oils in a slow, steady stream. Scrape down the sides of the bowl and season to taste. Refrigerate until ready to use.
Immediately before serving, toss the greens with just enough dressing to coat. Serve from the bowl or arrange on individual salad plates.
