Wild Green Salad With Tart Lemon Dressing

DIRECTIONS

  • Tear the greens into pieces and put them in a large bowl. Keep refrigerated, covered, until ready to serve.
  • Combine the lemon juice and egg yolk in the bowl of a food processor, and blend well. With the machine running, add the oils in a slow, steady stream. Scrape down the sides of the bowl and season to taste. Refrigerate until ready to use.
  • Immediately before serving, toss the greens with just enough dressing to coat. Serve from the bowl or arrange on individual salad plates.
