Angel Hair With Broccoli

DIRECTIONS
Cut the broccoli into florets. Peel and chop the stem into bite-size pieces. Cook the broccoli in lightly salted boiling water for 3 to 4 minutes until crispy but tender. Drain and refresh in ice water. Drain.
In a saucepan heat the oil and 3 tablespoons of the butter over medium heat.
In a skillet melt the remaining 1 tbsp butter and sauté the scallions and garlic for 2 minutes. Add the wine and cook for 5 minutes. Add the melted butter and oil, then the blanched broccoli. Heat thoroughly.
Cook the pasta in a large pot of salted boiling water until just tender, about 30 seconds (angel hair cooks very quickly). Drain well and put in a serving dish. Toss with the broccoli mixture. Serve at once with Parmesan cheese.
