Matzo Dumplings

DIRECTIONS

  • Soak the matzos a few minutes in cold water. Drain and squeeze dry.
  • Heat the fat in a skillet and add the onion. Fry to a golden brown. Add the soaked matzos, stir until mixture leaves the skillet clean. Off the heat add parsley, salt, pepper, ginger, nutmeg, and eggs. Mix well. Add just enough matzo meal to make a soft dough. Let stand several hours to swell.
  • Shape into balls the size of marbles. Test one by dropping into boiling water or soup. If it boils apart, add more meal. Boil dumplings for 15 minutes.
