DIRECTIONS

  • Soften the gelatin in the cold water; then dissolve completely over low heat. Let cool to room temperature.
  • Coarsely mash the avocados and mix with the gelatin, onion, sherry, sour cream, lemon juice, jalapeño, cilantro, and salt.
  • Spoon into a three-cup mold; cover and chill until firm, or overnight. To serve, unmold and serve with crackers or tortilla chips, or toasted pita bread that has been cut into small wedges.
