DIRECTIONS
Soften the gelatin in the cold water; then dissolve completely over low heat. Let cool to room temperature.
Coarsely mash the avocados and mix with the gelatin, onion, sherry, sour cream, lemon juice, jalapeño, cilantro, and salt.
Spoon into a three-cup mold; cover and chill until firm, or overnight. To serve, unmold and serve with crackers or tortilla chips, or toasted pita bread that has been cut into small wedges.
