DIRECTIONS
1. Rinse the wheat under cold, running water until water runs clear. Place in a large bowl and cover with cold water. Leave to soak for 20 minutes. Drain off any excess liquid.
2. Toss the grains with the tomatoes, scallions, and cucumber. Add the lemon juice and Vinaigrette Sauce. Season with salt and pepper. Let rest at room temperature for 1 hour or in the refrigerator for up to 24 hours.
3. Just before serving, add the freshly chopped herbs. Heap on a large platter and garnish with crisp lettuce leaves.
