Tabbouli (Cracked Wheat Salad)

DIRECTIONS

  • 1. Rinse the wheat under cold, running water until water runs clear. Place in a large bowl and cover with cold water. Leave to soak for 20 minutes. Drain off any excess liquid.
  • 2. Toss the grains with the tomatoes, scallions, and cucumber. Add the lemon juice and Vinaigrette Sauce. Season with salt and pepper. Let rest at room temperature for 1 hour or in the refrigerator for up to 24 hours.
  • 3. Just before serving, add the freshly chopped herbs. Heap on a large platter and garnish with crisp lettuce leaves.
