A Coffee Cake Ring

DIRECTIONS
Follow the ingredients and instructions for the Spiced Brioche Dought for bread, coffee cake, sticky buns and beehive cakes. Toss the filling ingredients in a mixing bowl and set aside. Lightly flour the dough, pat it out into a 10-by 14-inch rectangle, and transfer it to the baking sheet. Cover loosely, and chill 10 minutes or more.
Forming the ring.
Roll the dough into an even rectangle 18-1/2 inches long. Cut 1/2 inch off one of the short ends and reserve - to patch the seam after forming the ring. Transfer the rectangle of dough to a sheet of lightly floured foil. Lightly press the filling into the dough.
Roll the dough up lengthwise to make a trim log shape, using the foil to help you, as illustrated, step 1.
Turn the log seam side down and form into a ring, dampening the two ends to seal them. Transfer to the buttered pizza pan. Dampen one side of the reserved dough strip, and press it neatly over the seam.
With either large sharp kitchen shears or a knife, slash the outside of the ring all around at 1-1/2-inch intervals to open it. Turn each slash outward to expose the filling, step 2.
Final rise - 1 hour or more.
Cover loosely and let rise an hour or more, until well puffed. Preheat the oven to 350°F.
Baking - 45 minutes at 350°F.
Set in the middle level of the preheated oven and bake until nicely browned and crisp.
