Oven-Baked Apple Slices

Suggestions for Types of Cooking Apples:
Braeburn, Cortland, Empire, Fireside, Golden Delicious, Granny Smith, Haralson, Honeycrisp, Rome, Stayman, York Impreial.
Quarter, core and peel the apples; cut the quarters into lengthwise thirds to make slices 1/2 inch wide at the outside edge. Toss in a bowl with the sugar mixture, then with the lemon juice, and finally with the melted butter. Let sit 3 or 4 minutes to render juices and absorb flavor. Taste, and fold in a little more sugar, if needed.
Turn the apples into a lightly greased baking dish and distribute evenly. Bake for 30 to 40 minutes at 375°F on the middle rack of the oven. Spoon the accumulated cooking juices over the apples every 8 to 10 minutes. The apples are done when the slices are thoroughly tender but hold their shape; they should brown lightly. Baste with more juices if necessary. (If the juices have not reduced to a thick syrup, remove them from the baking pan and boil down in a small saucepan, then pour over the apples.)
