DIRECTIONS

  • Arrange chicken, skin side down, in a 2-quart soufflé dish: place breasts in center of dish, with legs, thighs, wings, and backs around them. Scatter garlic over and pour 1-1/2 cups of the broth over all. Add 6 grinds pepper. Cover tightly with microwave plastic wrap. Cook at 100% for 20 minutes.
  • Remove from oven and uncover. Remove chicken and keep warm. Strain cooking liquid into a 2-cup glass measure and add broth to make 2 cups.
  • Bring cooking liquid and broth to a boil in a saucepan on top of the stove. Add rice and cook. When done, add peas, chicken, and salt, heat through, and serve.
