Season fish with salt and pepper to taste.

Bring the Court Bouillon to a simmer in a pot large enough to hold the fish flat. Add the fish, a few pieces at a time, and simmer just until the flesh is opaque and easily flakes.

Carefully remove the fish to a platter with a slotted spoon and serve with a butter or tomato-based sauce of choice.
