  • Clean fish, remove skin whole and bone. Grind 1 onion with flesh of fish. Add bread soaked in cold water and squeezed dry or add cracker crumbs or matzo meal. Add salt and pepper to taste, egg, and cold water. Mix thoroughly until smooth.
  • Wash fish skin and fill with the mixture.
  • Boil fish bones, remaining onion and celery for 20 minutes in water to cover. Sprinkle fish with salt and pepper and add to kettle. Simmer 1 hour or longer until well done. Add water as necessary to prevent burning.
  • Remove fish carefully to a platter. Reduce broth until it is very thick. Strain and pour it over fish. Serve hot or cold.
