DIRECTIONS
Turn on the oven and heat it to 450°F. Line a shallow baking pan with foil and put it to heat in the oven. You need not use the foil, but it makes cleaning easier. When the pan is hot, brush it well with butter, arrange the fillets or steaks in the pan, sprinkle them lightly with flour, salt and pepper and dot with butter. Cook the fish for 10 minutes per inch of thickness, basting several times with melted butter, until tender when tested with a fork. Serve with chopped parsley, additional butter ,if necessary, and lemon wedges.
