West Coast Crab Cakes

DIRECTIONS
Blend the crabmeat with the fish, water chestnuts, green onions, egg yolks, and salt and pepper. Form into 8 balls, place on a plate and refrigerate for about an hour to firm up.
When ready to cook, heat the oil in a large skillet. Lightly flour the crab balls and place in the skillet. Flatten each ball with a spatula. Sauté gently, turning once, until a delicate brown on both sides. Drain on paper towels. Sprinkle with the coriander and serve with soy sauce.
