Brisket with Sauerkraut

DIRECTIONS

  • In a heavy casserole or Dutch oven with a cover, melt butter with oil. When sizzling hot, add meat and brown on all sides. Remove meat and pour off excess fat.
  • Return the meat to the pan and add enough cold water to cover. Bring to a boil over high heat and skim off any foam. Add onion, and salt to taste. Simmer until tender, about 2 hours.
  • Remove meat to a serving platter and keep warm. In a saucepan, combine 1/4 of the cooking liquid with sauerkraut, grated potato, and sliced apple. Sprinkle with caraway seeds and simmer 10 to 15 minutes.
  • Slice brisket and serve hot with sauerkraut. (The remaining cooking liquid makes a delicious broth to serve first as soup.)
