Brisket with Sauerkraut

DIRECTIONS
In a heavy casserole or Dutch oven with a cover, melt butter with oil. When sizzling hot, add meat and brown on all sides. Remove meat and pour off excess fat.
Return the meat to the pan and add enough cold water to cover. Bring to a boil over high heat and skim off any foam. Add onion, and salt to taste. Simmer until tender, about 2 hours.
Remove meat to a serving platter and keep warm. In a saucepan, combine 1/4 of the cooking liquid with sauerkraut, grated potato, and sliced apple. Sprinkle with caraway seeds and simmer 10 to 15 minutes.
Slice brisket and serve hot with sauerkraut. (The remaining cooking liquid makes a delicious broth to serve first as soup.)
