Soak ham for 12 hours in cold water, changing the water 2 or 3 times. Drain and scrub thoroughly.

Place in boiling water and simmer, covered, 25 minutes per pound. Let cool slightly.

Lift from kettle and remove rind. Score fat in a diagonal pattern. Spread thoroughly with brown sugar and stud with cloves. Place in roasting pan and bake uncovered for 20 or 30 minutes at 375°F, basting with cider, red wine, or concentrated fruit juice.
