DIRECTIONS
Place the drippings or goose fat in a deep braising pan. Sear the roast slowly on all sides to give it a fine color.
Add the salt pork, pig's feet, carrots, onions, and garlic, and place in a 450°F oven for 15 minutes. Add the Cognac, wine, and seasonings. Cover and cook over low heat or in a 250°F oven, preferably, for 3 to 3-1/2 hours.
It is delicious served hot with small new potatoes or served cold with a good salad and some pickles.
