Braised Short Rib Recipe

  • Dredge the ribs lightly with flour and brown them well on all sides in the fat - adding more fat if necessary. This may be done in a large heavy skillet or in the braising pan you will use for the simmering. Season the ribs with salt and pepper, and when they are deeply colored, add them to the braising pan. Add the garlic, vegetables, and herbs. Heat the stock to the boiling point. If you browned the ribs in a separate skillet, rinse it out with the liquid and pour over the ribs. If not, pour the liquid over the ribs in the braising pan. Cover and simmer over low heat or in a 300°F oven until the ribs are tender - from 1-1/2 to 2 hours.
  • Taste the sauce for seasoning. Remove the ribs and the vegetables to a hot platter. Thicken the sauce, if you wish, with tiny balls of butter and flour kneaded well together. Or just serve the sauce as it is with some of the fat skimmed off. Noodles or boiled potatoes, perhaps sliced tomatoes.
