American Beef Stew

DIRECTIONS
Flour the beef thoroughly. Melt the fat in a heavy skillet, stew pan, or braising pan. Use beef fat or drippings or half oil, half butter. Sear the floured beef well on all sides till it has a pleasant brown color.
Add the onions, and cook them till lightly brown. Add the seasonings and water to barely cover, and bring to a boil. Cover tightly and simmer 1-1/2 to 2 hours. Test the beef for tenderness and for seasoning, and cook till tender.
To thicken the sauce, add pea-sized balls of flour and butter kneaded together, and stir over low heat until the desired thickness has been reached. Serve with boiled potatoes in their jackets.
